Graham Balls

Ingredients:

2 cups Graham crackers, crushed
1/4 cup icing sugar
1/2 cup unsalted butter, melted
1/2 - 3/4 cup Nutella or peanut butter or condensed milk

Chocolate coating:
200g milk chocolate or white chocolate
75ml double cream
1 tbsp. melted butter

Choices of Sprinkles:
Graham powder
Desiccated coconut
Chopped nuts
Chocolate bits

Procedure:

1. Prepare a baking sheet with wax paper or parchment paper.

2. Combine crushed Graham crackers and icing sugar, mix it well. Then add melted butter and Nutella or peanut butter. Mix it well to form a dough.

3. Using 1 tbsp., scoop the mixture and squeeze it firmly with your clean hands then roll it in between your palms to form a ball. Place it on the prepared lined tray. Continue the procedure till all the mixture is consumed. Refrigerate for at least 30 minutes to firm it up.

4. For the chocolate coating, place the milk or white chocolate in a heat proof bowl then add the double cream and butter. Place it in the microwave for 1 minute. Stir it well until well blended and set aside. Or you can place the heat proof bowl on top of sauce pan with boiling water to melt the chocolate.

5. Dip the graham balls into the melted chocolate for coating. Then roll it into your choice of sprinkles. Place it back onto the prepared tray then refrigerate for 30-60 minutes till the coating is firmed. Enjoy!

"When I See You Smile" (BAD ENGLISH)

Sometimes I wonder how I'd ever make it through
Through this world without having you
I just wouldn't have a clue

'Cause sometimes it seems like this world's closing in on me
And there's no way of breaking free
And then I see you reach for me

Sometimes I wanna give up, wanna give in
I wanna quit the fight
And then I see you baby
And everything's alright, everything's alright

When I see you smile, I can face the world
Oh, oh
You know I can do anything
When I see you smile, I see a ray of light
Oh, oh

I see it shining right through the rain
When I see you smile
Baby when I see you smile at me
Oh, yeah

Baby there's nothing in this world that could ever do
What a touch of your hand can do
It's like nothing that I ever knew
Hay

And when the rain is falling, I don't feel it
'Cause you're here with me now
And one look at you baby
Is all I'll ever need, all I'll ever need

Sometimes I wanna give up, I wanna give in
I wanna quit the fight
Then one look at you baby
And everything's alright
Hay, everything's alright
It's alright

"What Hurts The Most" Lyrics (Rascal Flatts)

I can take the rain on the roof of this empty house
That don't bother me
I can take a few tears now and then and just let 'em out

I'm not afraid to cry every once in a while even though
Goin' on with you gone still upsets me
There are days every now and again
I pretend I'm okay
But that's not what gets me

What hurts the most
Was being so close
And havin' so much to say
And watchin' you walk away

And never knowin'
What could've been
And not seein' that lovin' you
Is what I was tryin' to do

It's hard to deal with the pain of losin' you everywhere I go
But I'm doin' it
It's hard to force that smile when I see our old friends and I'm alone
Still harder gettin' up, gettin' dressed, livin' with this regret
But I know if I could do it over
I would trade, give away all the words that I saved in my heart
That I left unspoken

What hurts the most
Is being so close
And havin' so much to say
(Much to say)
And watchin' you walk away

And never knowin'
What could've been
And not seein' that lovin' you
Is what I was tryin' to do,
Oh yeah

What hurts the most
Was being so close
And havin' so much to say (Much to say)

And watchin' you walk away

And never knowin'
What could've been
And not seein' that lovin' you
Is what I was tryin' to do

Not seein' that lovin' you
That's what I was trying to do, ooo

Pumpkin Pie Brownies With Dulce de Leche Whipped Cream

Prep Time: 20 minutes
Cook Time: 50 minutes
Total Time: 1 hour, 10 minutes
Yield: 24 servings
Serving Size: 1 brownie

Ingredients:

For the Brownie Layer:
1 box(13x9 size) brownie mix; set aside 1 cup for topping
1/2 cup(115g) unsalted butter, melted(1 stick)
1 egg

For the Pumpkin Pie Layer:
15 oz 100% pure pumpkin (not pumpkin pie filling)
5 oz evaporated milk
2 eggs
2 teaspoons vanilla extract
1/2 cup(100g) packed brown sugar
2 1/2 teaspoons pumpkin pie spice
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves

For the Brownie Crumble Topping:
1 cup reserved brownie mix(see above)
1/2 cup(100g) granulated sugar
1/4 c(58g) unsalted butter, softened(1/2 stick)
For the Dulce de Leche Whipped Cream:
2 cups(16 oz) heavy whipping cream
1 teaspoon vanilla extract
1/2 cup Dulce de Leche
pinch of salt

Directions:

For the Pumpkin Pie Brownies:
Preheat oven to 350 degrees. Spray a 13x9x2 pan with non-stick spray. Set aside 1 cup of the brownie mix for the crumble topping and pour the rest into a bowl. Add 1/2 cup melted butter and 1 egg and mix with a spoon until combined. Evenly spread brownie mixture in your prepared pan.
In a bowl, combine the pumpkin, evaporated milk, 2 eggs, and brown sugar and stir with a spoon or whisk until combined. Add the spices and stir thoroughly. Spread the pumpkin pie layer evenly over the brownie layer.

Pour the reserved 1 cup of brownie mix, the granulated sugar, and the 1/4 cup of softened butter into a bowl and combine until everything is incorporated and crumbly. Evenly sprinkle the crumbly mixture over the pumpkin layer.

Bake in preheated oven until knife inserted in center comes out fairly clean, about 50 minutes.
Allow to cool completely before topping with whipped cream.

For the Dulce de Leche Whipped Cream:
After the brownies are cooled, pour the heavy whipping cream into a stand mixer or a large bowl. Beat with your mixer or by hand until the mixture starts to thicken. Then add the vanilla, Dulce de Leche, and salt. Continue to beat until the cream has soft peaks. Top each Pumpkin Pie Brownie Square with a dollop of the Dulce de Leche whipped cream:)
Notes

I used Betty Crocker's Dark Chocolate Brownie mix, but you can use your favorite mix as long as it's 13x9 size:)

I like to use the same bowl for each layer, rinsing and drying in between, to save on dishes.

Cook Time: 35 minutes

Ingredients

1 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon salt
3 1/2 ounces semisweet chocolate, coarsely chopped
1/2 cup (1 stick) unsalted butter
1/2 cup stout or other dark beer, or cold coffee
4 large eggs, at room temperature
1 cup granulated sugar
1 cup packed light brown sugar
2 teaspoons pure vanilla extract
1 cup semi-sweet chocolate chips
Instructions

1.Place a rack in the center of the oven and preheat oven to 350 degrees F. Butter and flour a 9 x 13-inch baking pan. Set aside.

5.Pour into the prepared pan and bake for 35 to 40 minutes or until the edges are firm and the center is set. Remove from the oven and allow to cool completely in the pan before slicing.
6.Slice into 12 large or 24 small brownies.
To store, cover the pan in plastic wrap and keep on the counter for up to one week.

"Invisible" HUNTER HAYES

Crowded hallways are the loneliest places
For outcasts and rebels
Or anyone who just dares to be different
And you've been trying for so long
To find out where your place is
But in their narrow minds
There's no room for anyone who dares to do something different
Oh, but listen for a minute

Trust the one
Who's been where you are wishing all it was
Was sticks and stones
Those words cut deep but they don't mean you're all alone
And you're not invisible
Hear me out,
There's so much more to life than what you're feeling now
Someday you'll look back on all these days
And all this pain is gonna be invisible
Oh, invisible

So your confidence is quiet
To them quiet looks like weakness
But you don't have to fight it
'Cause you're strong enough to win without a war
Every heart has a rhythm
Let yours beat out so loudly
That everyone can hear it
Yeah, I promise you don't need to hide it anymore
Oh, and never be afraid of doing something different
Dare to be something more

Trust the one
Who's been where you are wishing all it was
Was sticks and stones
Yeah, the words cut deep but they don't mean you're all alone
And you're not invisible
Hear me out,
There's so much more of this life than what you're feeling now
And someday you'll look back on all these days
And all this pain is gonna be invisible

These labels that they give you
just 'cause they don't understand
If you look past this moment
You'll see you've got a friend
Waving a flag for who you are
And all you're gonna do
Yeah, so here's to you
And here's to anyone who's ever felt invisible

Yeah, and you're not invisible
Hear me out,
There's so much more to life than what you're feeling now
And someday you'll look back on all these days
And all this pain is gonna be invisible
It'll be invisible

Feast of the Guardian Angels

The Feast of the Guardian Angels is a feast of the Catholic Church officially observed on 2 October. In some places, the feast is observed on the first Sunday in September with the permission of the Vatican.[1] Catholics set up altars in honor of guardian angels as early as the 4th Century, and local celebrations of a feast in honor of guardian angels go back to the 11th Century.[2] The feast was first kept by the Franciscan order in 1500.[3] However, it was not placed in the General Roman Calendaruntil 1607 by Pope Paul V. The papal decree establishing the feast was cosigned by Robert Bellarmine, which has led some scholars to speculate that the feast was created under the influence of the Society of Jesus.[4] It was originally ranked as a doubleClement X elevated it to the rank of an obligatory double, and, finally, Leo XIII raised the feast to the rank of a double major.[1] Since 1976, it has been ranked an obligatory memorial.[5] The feast is also observed by some Anglo-Catholics within theAnglican Communion and most churches of the Continuing Anglican movement.
On October 2, 1795, Pius VI granted 100 days of indulgence for making the Devotions to our Guardian Angels and Patron Saints, as well as a plenary indulgence on the actual feast day to those who make the devotion twice a day for an entire year. The Devotion reads:
O Angel of God, to whose holy care I am committed by the supernal clemency, enlighten, protect, defend, and govern me. Amen.[6]
John XXIII wrote a Meditation for the Feast of the Guardian Angels, which reads, in part:
We must remember how admirable was the intention of divine Providence in entrusting to the angels the mission of watching over all mankind, and over individual human beings, lest they should fall victims to the grave dangers which they encounter.[7]
The Feast of the Guardian Angels was of seminal importance to Josemaría Escrivá, who considered himself to have been inspired by God to foundOpus Dei on October 2, 1928. The significance of the day of his inspiration was evident to Escrivá, who believed that it was a sign that the work of the order would be carried out under the protection of angels.[8] Escrivá dated his discovery of "spiritual childhood," a notion which is, according to John Coverdale, "the foundation of the spirit of Opus Dei," to October 2, 1931. According to Escrivá, this idea also came to him while he was praying to his guardian angel.[9]
