LEFTOVER RICE FRITTERS

Preparation time : 30 minutes
Serves : 15 fritters

Leftover Rice Fritters / Pakoras / Pakodas Croqueetes

Ingredients for Leftover Rice Fritters

  • Leftover Rice – 1 1/2 cup
  • Medium Onion finely chopped – 1/2
  • Ginger grated – 1/2 inch
  • Garlic cloves finely chopped – 2
  • Green chilies / Serrano pepper finely chopped – 1
  • Coriander leaves / Cilantro chopped – 6 strands
  • Red chile powder / Cayenne powder – 1/2 tsp
  • Corn starch – 2 tbsp
  • Chopped nuts – 1 tbsp (almonds, peanuts or any nuts of your choice)
  • Salt – to taste
  • Vegetable Oil – for frying

Steps to prepare Leftover Rice Fritters
Step I

  • Heat oil in heavy bottomed pan on medium flame for frying. See that atleast 40 – 50 percent of pan is filled with oil.
  • In a large bowl combine all the ingredients except vegetable oil, mash and mix well.

Step II

  • You can now make fritters of desired shape and keep it aside.
  • Once the oil is hot, drop the fritters in oil about 7 to 8 depending on the size of your pan. Leave this undisturbed for about 2 – 3 minutes.
  • Then using a slotted spoon separate any fritters that may be sticking to each other, and then flip them in oil occasionally to fry them till they are crispy and golden brown on all the sides.
  • Transfer them to paper towel to absorb any excess oil. Repeat the process for remaining mixture / fritters.
  • Leftover Rice Fritters are now ready. Serve hot and enjoy.

Tip:

  • The juices released from onion was sufficient to form a nice mixture.
  • If your mixture is too dry, then add water little by little to form a stiff mashed mix.
  • If your mixture is too thin, then add additional corn starch (or rice flour or all purpose flour) of desired.
  • Vary the amount of red chilli powder as per your taste.
  • You can also substitute corn starch with all purpose flour / maida.
  • To check if the oil is hot, add small piece of mixture. Check if it sizzles and comes up immediately.
  • If the oil is too hot, your fritters will brown faster on the outside and will remain uncooked inside. If it is cold, then it will absorb excess oil. The best practice is to fry them between medium and medium high flame.
  • Do not overcrowd the pan. This may make your fritters break and absorb oil.
  • Total frying time may be about 8 – 10 minutes, however this may depend on size of your pan, number of fritters, flame, amount of oil and so on.

In a large bowl, stir together the mashed potatoes, turkey, scallions, cheese and eggs until well combined. Place the breadcrumbs in a separate large bowl.
Using a small ice cream scoop or spoon, scoop out about 3 tablespoons of the mashed potato mixture and roll it into a ball. Roll the ball in the breadcrumbs, shaking off any excess. Repeat the scooping, rolling and breading process with the remaining mashed potato mixture.

Line a baking sheet with paper towels. Add the vegetable oil to a large heavy-bottomed stockpot and attach the deep-fry thermometer to the side. Heat the oil until it reaches 360°F. Carefully add a few of the mashed potato balls to the oil and cook them, turning occasionally, until they're golden brown. Using a slotted spoon or colander, transfer the mashed potato bites to the paper towel-lined plate and immediately season them with salt. Add the remaining mashed potato balls to the oil, returning the oil to 360°F between each batch.
Serve the mashed potato bites with leftover cranberry sauce or gravy for dipping.
Note: All leftover mashed potatoes will vary in texture and taste. If your mashed potatoes are thinner in consistency, add additional flour until the mixture is cohesive. Similarly, season the potato mixture with salt and pepper to your personal taste preferences.

10 Things To Do With Pasta Sauce (Beyond Pasta)

By Value Guru, October 1, 2014

Mama mia! Who knew your favorite quick meal must-have — pasta sauce — could be used for so much more than simply topping spaghetti?

Here are 10 things to do with pasta sauce (beyond pasta):
  1. Eggs in purgatory. Simmer 1 cup pasta sauce in a small skillet. Poach 2 eggs and top with pepper and grated parmesan cheese.
  2. Chili. Take a pasta sauce shortcut to chili. Just add beans and chili powder.
  3. Spanish rice. Cook 1 cup rice according to the package directions, substituting 1 cup pasta sauce for 1 cup of the water; stir in capers, green olives and chopped green onions.
  4. Ratatouille. Chop bell peppers, zucchini, onion and eggplant. Toss with olive oil and garlic. Arrange in a baking dish. Add 2 parts pasta sauce to 1 part water to just cover. Bake at 350°F until vegetables are tender (about 40 minutes). Top with fresh basil.
  5. Minestrone soup. Heat 1 jar pasta sauce and 5 cups water. Stir in cooked small pasta, chopped carrots, celery, chopped green beans and cooked kidney beans. Cook until vegetables are tender.
  6. Italian meatloaf. Pour a jar of pasta sauce over your favorite meatloaf before baking.
  7. Panini. Spread a layer of pasta sauce and layer your favorite melty cheese on a slice of crusty bread. Top with another slice of bread. Toast in a skillet or panini press.
  8. Poached cod. Pour a jar of tomato sauce into a skillet. Bring to a boil. Season cod with salt and pepper, and add to the skillet. Cover, reduce heat and simmer until cod is just cooked through, about 10 minutes.
  9. Eggplant parmesan. Try our Easy Baked Eggplant Parmesan recipe for a meal with rich real Italian flavor.
  10. Pizza. Mini Mummy Pizzas are a family-pleasing use for a jar of leftover pasta sauce.
What’s your favorite way to use pasta sauce?
