Quick Potato Soup

Here is a very basic and old potato soup recipe. All you need to have is potatoes, margarine, onions, milk, water and salt. Cooking is very easy and quick too.
Ingredients:
2 cups thinly-sliced raw potatoes
1  tablespoon margarine
1/4 cup finely-chopped onion
3/4  teaspoon salt
1  1/4  cups boiling water
1  1/2 cups milk (may be partly evaporated milk)


  • Add potatoes and onions to the boiling water.
  • Cover, and cook for about 14 to 20 minutes, or until potatoes are tender.
  • Mash the potatoes slightly with a fork to thicken the soup a little, if desired.
  • Add milk, margarine and seasoning. Heat to serving temperature.
  • Top each serving with a dab of sour cream and sprinkle with finely cut parsley.
  • Yield: 4 serving, a cup each.

    1. Melt the butter in a heavy saucepan. When it foams, add the potatoes and onions and toss them in the butter until well coated.
    2. Sprinkle with salt and a few grinds of pepper. Cover with a butter wrapper or paper lid and the lid of the saucepan. Sweat on a gentle heat for approximately 10 minutes.
    3. Meanwhile, bring the stock to the boil. When the vegetables are soft but not coloured add the boiling stock and continue to cook for about 10-15 minutes or until the vegetables are soft.
    4. Add the milk and purée the soup in a blender or food processor. Taste and adjust seasoning.
    5. Serve sprinkled with a few freshly chopped herbs or some of the following garnishes.
