The recipe requires no baking and the total time of preparation is approximately 20 minutes.
Ingredients:
- 450 gr cream cheese (Philadelphia)
- 1 store-bought graham cracker crust (or you can make your own)
- 200 ml carrot juice (store-bought or homemade)
- 100 gr sugar
- 100 ml cold heavy cream
- 50 ml caramel sauce
- 100 gr chopped walnuts
- 1 teaspoon vanilla extract
- 1 teaspoon powdered cinnamon
- ½ teaspoon pumpkin pie spice
- A pinch of salt
Preparation:
Beat cream cheese, sugar, vanilla extract, pumpkin pie spice and salt using a high-speed mixer. Slowly add carrot juice and mix well. Set aside.
In another bowl, whip the cream and gently fold it into the previously prepared mixture. Stir and spread the mixture on the cracker crust. Put in the refrigerator and leave it for a few hours, to firm.
Microwave the caramel sauce for approximately 15 seconds and add walnuts. Stir and carefully spread the mixture on the top of the cheesecake.
Keep in refrigerator until ready to serve.
